Ingredients

  • 1.5 lbs Boneless chicken thighs, cut into bite-sized pieces
  • 1/2 cup Greek yogurt, plain
  • 1 tbsp Lemon juice, fresh
  • 2 cloves Garlic, minced
  • 1 tbsp Fresh ginger, grated
  • 1 tbsp Garam masala
  • 1 tsp Salt
  • 3 tbsp Butter or ghee
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 tbsp Fresh ginger, grated
  • 1.5 cups Crushed tomatoes, canned or fresh
  • 1/2 cup Heavy cream or coconut/cashew cream
  • 1 tbsp Tomato paste
  • 1 tbsp Garam masala
  • 1 tsp Paprika
  • 1/4 tsp Cayenne pepper, optional
  • 2 tbsp Butter, stirred in at the end
  • 1 bunch Fresh cilantro, chopped for garnish
  • 1 Lime wedges, optional

Instructions

  1. Mix the chicken: Marinate the chicken pieces in yogurt, lemon juice, minced garlic, grated ginger, garam masala, and salt. Allow it to rest.
  2. Sauté onions: In a large pan, melt butter over medium heat. Add chopped onions and sauté until golden brown. Add minced garlic and ginger.
  3. Tomato paste and spices: Add tomato paste, garam masala, and paprika; toast for a minute. Slowly add crushed tomatoes and let simmer until thickened.
  4. Cook chicken: Introduce the marinated chicken into the sauce and cook until tender.
  5. Creamy finish: Lower heat and fold in the cream and 2 tablespoons of butter just before serving.
  6. Serve: Garnish with cilantro and serve with basmati rice or naan.
