- 2 medium Sweet potatoes, peeled and diced
- 1 medium Yellow onion, chopped
- 1 medium Bell pepper, chopped
- 3 cloves Garlic, minced
- 2 tbsp Olive oil
- 1 tsp Sea salt
- 1/2 tsp Black pepper
- 1 tsp Smoked paprika
- 1 tsp Fresh thyme leaves (optional)
- 1/2 tsp Cumin (optional)
- 1/4 tsp Red pepper flakes (optional)
- 2 tbsp Fresh parsley, for garnish
Instructions
- Prepare sweet potatoes, veggies, and garlic: Peel and dice the sweet potatoes, chop the onion and bell pepper, and mince the garlic.
- Heat the pan until it’s hot: Heat olive oil in a large skillet until shimmering.
- Cook sweet potatoes until browned: Add diced sweet potatoes to the hot oil, stirring occasionally until golden brown.
- Add onions, peppers, and garlic: Toss in the chopped onions, bell peppers, and minced garlic, cooking until the onions turn translucent.
- Add herbs, season, and serve: Sprinkle in the smoked paprika, sea salt, black pepper, thyme, cumin, and red pepper flakes. Stir and garnish with fresh parsley before serving.
Notes
This dish can be made ahead and stored in an airtight container in the fridge for up to four days. Reheat in a skillet over medium heat for best results.
