Description

Indulge in soft, chewy cookies that evoke the rich, creamy layers of classic tiramisu, infused with espresso and mascarpone.


Ingredients

  • 2 1/4 Cups All-purpose flour (sifted)
  • 1/4 Cup Strong espresso (cooled)
  • 1/2 Cup Unsalted butter (softened)
  • 3/4 Cup Brown sugar (packed)
  • 2 Large eggs (room temperature)
  • 1 tsp Vanilla extract
  • 1 tsp Baking powder
  • 1/2 tsp Fine salt
  • 8 oz Mascarpone cheese (room temperature)
  • 1/2 Cup Powdered sugar
  • 1/2 Cup Heavy cream (whipped)
  • 1 tsp Dark rum (optional)
  • 1 tsp Pure vanilla extract
  • 1/4 Cup Dark chocolate shavings
  • 2 tbsp Unsweetened cocoa powder (for dusting)
  • 12 Coffee beans (for garnish)

Instructions

  1. Brew strong espresso and cool it.
  2. Cream butter and brown sugar until fluffy.
  3. Add eggs one at a time, mixing well.
  4. Mix dry ingredients with cooled espresso.
  5. Chill the dough for 30 minutes.

Notes

These cookies can be stored in an airtight container at room temperature for up to a week. Freezing portions is also recommended for longer storage.
