- 1/4 Cup Strong espresso (cooled)
- 1/2 Cup Unsalted butter (softened)
- 3/4 Cup Brown sugar (packed)
- 2 Large eggs (room temperature)
- 1 tsp Vanilla extract
- 1 tsp Baking powder
- 1/2 tsp Fine salt
- 8 oz Mascarpone cheese (room temperature)
- 1/2 Cup Powdered sugar
- 1/2 Cup Heavy cream (whipped)
- 1 tsp Dark rum (optional)
- 1 tsp Pure vanilla extract
- 1/4 Cup Dark chocolate shavings
- 2 tbsp Unsweetened cocoa powder (for dusting)
- 12 Coffee beans (for garnish)
Instructions
- Brew strong espresso and cool it.
- Cream butter and brown sugar until fluffy.
- Add eggs one at a time, mixing well.
- Mix dry ingredients with cooled espresso.
- Chill the dough for 30 minutes.
Notes
These cookies can be stored in an airtight container at room temperature for up to a week. Freezing portions is also recommended for longer storage.
