- 2–3 lbs Fresh turkey necks
- 1 tbsp Hot sauce (Optional for added heat)
- 1 tbsp Smoked paprika
- 2 tsp Cajun seasoning
- 1 tbsp Worcestershire sauce
- 2 Yellow onions (Chopped for base)
- 2 Carrots (Chopped)
- 2 Celery (Chopped)
- 1 Bell pepper (Chopped)
- 4–5 cloves Garlic (Minced)
- 1/4 cup All-purpose flour (For thickening)
- 4–5 cups Chicken stock
- 2 Bay leaves (For flavor)
- 2–3 sprigs Fresh thyme
Instructions
- Season turkey necks with hot sauce, Cajun seasoning, and smoked paprika. Let them marinate before browning them in a hot skillet until golden brown.
- In a large pot, sauté chopped onions, carrots, celery, and bell peppers until softened, then add minced garlic.
- Add the browned turkey necks back to the pot with the sautéed vegetables. Pour in chicken stock and add bay leaves and thyme. Cover and let simmer until the meat falls off the bone.
- Taste and adjust the seasoning before serving. Let rest before serving for the flavors to settle.
Notes
Leftovers can be stored in an airtight container for up to three days in the refrigerator or frozen for longer storage. Reheat gently to maintain moisture.
