Preparation

  • Start by heating the olive oil in a skillet over medium heat, allowing it to shimmer slightly.
  • Add the chopped onion, sautéing it until it becomes translucent and lightly browned, which will take about 5 minutes.
  • Stir in the minced garlic, curry powder, ground cinnamon, paprika, bay leaf, grated ginger, sugar, and a pinch of salt. Continue to stir for about 2 minutes.

Cooking

  • Incorporate the chicken pieces into the skillet, tossing them until they are well-coated with the spice mixture and starting to brown; this will take about 5-7 minutes.
  • Add the tomato paste, yogurt, and coconut milk to the chicken, stirring vigorously to create a creamy sauce. Let the mixture reach a gentle boil.
  • Once boiling, reduce the heat to low and let it simmer for 20 to 25 minutes.
  • After simmering, remove the bay leaf and stir in the fresh lemon juice and cayenne pepper for an extra zing. Allow it to simmer for another 5 minutes.

Notes
