Instructions
 

Preparation

  • Preheat your grill to medium-high heat.
  • Season the sirloin steak generously with coarse salt and freshly ground black pepper. Let it sit for a few minutes.

Grilling

  • Grill the steak for about 4-5 minutes per side for medium-rare, adjusting time as desired. Remove from grill and let it rest.
  • Add the corn to the grill and turn occasionally for about 10 minutes until cooked and lightly charred.
  • Once cooled, remove the corn kernels from the cob.

Making the Vinaigrette

  • In a small bowl, whisk together balsamic vinegar, Dijon mustard, Worcestershire sauce, garlic powder, lemon zest, and olive oil. Season with salt and pepper.

Assembly

  • In a large bowl, toss together mixed greens, cherry tomatoes, red onion, and grilled corn. Drizzle the vinaigrette over and mix well.
  • Slice the grilled steak and lay it over the salad. Top with crumbled Gorgonzola cheese, chopped parsley, and basil.
  • Garnish with additional lemon zest.

Notes

For optimal flavor, allow the steak to rest after grilling. Consider marinating the steak for extra flavor. Variations include swapping Gorgonzola with feta or goat cheese.
