Ingredients

For the chicken skewers

  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Wooden skewers soaked in water for 30 minutes for skewering

For the bang bang sauce

  • 1 1/4 cups mayonnaise
  • 2/3 cup Thai sweet chili sauce
  • 2 teaspoons Sriracha or more to taste
  • 2 tablespoons honey

Instructions

Preparation

  • In a large mixing bowl, combine the cubed chicken breasts, olive oil, paprika, garlic powder, kosher salt, and black pepper. Toss everything together until the chicken is evenly coated.
  • Take the soaked wooden skewers and thread on 4-5 chicken cubes per skewer.
  • In a small bowl, combine the mayonnaise, Thai sweet chili sauce, Sriracha, and honey. Mix well until it reaches a smooth, creamy consistency.
  • Reserve half of this bang bang sauce for serving. The rest will be used to brush over the chicken skewers before cooking.

Cooking

  • Place the chicken skewers in a single layer in the air fryer basket. Cook at 400°F for about 11-12 minutes, flipping halfway through the cooking time.
  • Ensure the chicken reaches an internal temperature of 165°F to ensure proper doneness.
  • Once cooked, serve the skewers hot, drizzled or brushed with the reserved bang bang sauce. Enjoy!

Notes

Marinate the chicken for extra flavor, add veggies to the skewers, avoid overcrowding in the air fryer, and garnish with chopped green onions or sesame seeds.
