Instructions
 

Preparation

  • Heat a skillet over medium heat and brown the ground beef until no longer pink; drain excess fat.
  • Add the diced onion and minced garlic and sauté for about 3-4 minutes until the onion is translucent.
  • Stir in chili powder, ground cumin, salt, and black pepper, then pour in 1 cup of enchilada sauce and let it simmer for 5 minutes.
  • Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.

Assembly

  • Spread a layer of enchilada sauce at the bottom of the baking dish.
  • Layer with tortillas, half of the beef mixture, a third of the black beans, and a mix of cheddar and Monterey Jack cheeses.
  • Repeat these layers to create a delicious tower of flavor.

Baking

  • Finish with more tortillas on top and sprinkle remaining cheese over everything.
  • Pour remaining enchilada sauce on top, cover with foil, and bake for 20 minutes.
  • Remove foil and bake for an additional 10-15 minutes or until cheese is golden.
  • Let casserole rest for 10 minutes before serving; garnish with fresh cilantro if desired.

Notes

Consider adding Worcestershire sauce to the beef while browning for extra depth. Mix in diced vegetables like bell peppers or corn for added flavor. Crisping the tortillas slightly before layering will enhance texture.
