  • 2 slices slices of bread (your choice of soft, fresh white, hearty whole wheat, or tangy sourdough)
  • 1/2 lb thinly sliced roast beef juicy and full of flavor
  • 2 tablespoons butter, softened for that golden crispiness
  • 2 slices cheddar cheese sharp and melty
  • 1 tablespoon Dijon mustard optional, for a zesty kick
  • 1 tablespoon mayonnaise for creaminess
  • 1 small onion, thinly sliced optional, for sweetness
  • 1 tablespoon olive oil for grilling

Instructions
 

Preparation

  • Heat a skillet or griddle over medium heat, ensuring it’s hot enough.
  • Butter one side of each slice of bread generously.
  • Spread mayonnaise on the unbuttered side of one slice and Dijon mustard on the other slice.

Cooking

  • Place the slice of bread with buttered side down in the skillet.
  • Layer with a slice of cheddar cheese, followed by roast beef and another slice of cheddar cheese.
  • Top with the second slice of bread, buttered side facing out.
  • Cook for about 3-4 minutes on each side until the bread is golden brown and the cheese is melted.
  • Press down gently on the sandwich with a spatula while grilling.
  • If using onions, add them to the sandwich during grilling.
  • Once cooked, remove from skillet and let rest for a minute before slicing.

Notes

For variations, try different types of bread or cheeses. Add herbs for freshness. Use low heat to prevent burning. Leftovers can be stored in an airtight container in the refrigerator.
