Preparation

  • Slice the tenderloin in half crosswise to create two smaller, manageable roasts.
  • If the meat is untied, fold the ends up against the center and secure each roast with kitchen twine.
  • For the best flavor, chill the roasts uncovered in the refrigerator for 12 hours if possible.

Cooking

  • Allow the beef to stand at room temperature for 1-2 hours before cooking.
  • Preheat your oven to 430°F (220°C).
  • Season the tenderloin roasts generously with coarse salt and freshly cracked black pepper.
  • In an oven-proof skillet, heat 2 tablespoons of oil over medium-high heat.
  • Sear the roasts on all sides until beautifully golden, roughly 12 minutes in total.
  • Mix the remaining butter with minced garlic and optional Dijon mustard, reserving some for the sauce.
  • Spread the garlic butter mixture generously over each roast.
  • Transition the skillet to the preheated oven, roasting until the internal temperature reaches desired doneness (about 130°F for medium-rare).
  • Once done, let the roast rest for 15 minutes to allow juices to redistribute.

Making the Pan Sauce

  • Skim off excess fat from the pan juices.
  • Sauté finely chopped onion in the leftover pan juices, adding thyme or rosemary, beef stock, and season to taste.
  • Whisk in the reserved garlic butter before serving.

Notes

Ensure your beef is at room temperature before cooking. Searing well helps lock in moisture and creates a lovely crust. Add sautéed vegetables to the pan sauce for extra flavor.
