Ingredients
  

For the cheesecake filling

  • 1.5 cups cottage cheese, creamy and rich Use low-fat for a healthier option.
  • 1 cup fresh mixed berries (strawberries, blueberries, raspberries) Can also use frozen berries, thawed and drained.
  • 1 cup graham cracker crumbs For the crust.
  • 0.25 cup melted butter Aromatic and inviting.
  • 2 tbsp honey To enhance sweetness.
  • 2 tbsp sugar For added sweetness.
  • 1 tsp vanilla extract For flavor.
  • 2 large eggs To bind the ingredients.
  • 0.25 cup Greek yogurt For creaminess and tang.
  • 1 tbsp lemon juice For brightness.

For the berry topping

  • 1 tbsp honey To enhance sweetness of the berries.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine graham cracker crumbs, melted butter, and 1 tablespoon of sugar. Press into the bottom of a springform pan.
  • In a blender, combine cottage cheese, honey, Greek yogurt, eggs, vanilla extract, lemon juice, and remaining sugar. Blend until smooth.
  • Pour the filling over the crust in the pan, smoothing the surface.

Baking

  • Bake for 45-50 minutes until edges are slightly puffed and center is set.
  • Let cool at room temperature.
  • In a bowl, mix fresh berries with 1 tablespoon of honey.
  • Spoon the berry mixture over the cooled cheesecake.
  • Chill for 2-3 hours in the fridge before serving.

Serving

  • Slice into the cheesecake and serve, optionally garnished with mint leaves.

Notes

Ensure all ingredients are at room temperature for best results. Don't skip the chilling time for proper set. Consider variations with different fruits or flavors.
