Preparation

  • Preheat your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or greasing the muffin cups.
  • In a large bowl, whisk together the flour, baking powder, baking soda, salt, and granulated sugar. Mix until all dry ingredients are fully combined.
  • In a separate bowl, whisk together the egg, whole milk, melted butter, and vanilla extract.
  • Pour the wet ingredients into the bowl with dry ingredients. Stir until just combined, being careful not to overmix.
  • Gently fold in the mixed berries.
  • In a small bowl, mix the softened cream cheese, powdered sugar, and 1/2 tsp vanilla extract until smooth.

Baking

  • Spoon a small amount of muffin batter into each muffin cup, then add a dollop of the cream cheese mixture in the center.
  • Top with additional muffin batter until the muffin cups are about 3/4 full.
  • Utilize a toothpick or skewer to swirl the cream cheese filling into the muffin batter.
  • Bake your muffins for 18-22 minutes or until a toothpick comes out clean.
  • Allow the muffins to cool for a few minutes before transferring them to a wire rack.

Notes

For extra decadence, add chocolate chips to your batter or sprinkle them on top before baking. Use fresh or frozen berries without thawing.
