Instructions
 

For the Crust

  • Preheat your oven to 325°F (165°C) and line the bottom of a 9-inch springform pan with parchment paper.
  • In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar.
  • Press the mixture evenly into the bottom of the pan to create the crust.
  • Bake for 8-10 minutes, then set aside to cool.

For the Cheesecake Filling

  • In a large mixing bowl, beat the cream cheese and granulated sugar until smooth.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract, sour cream, and flour until mixed.
  • Gently fold in the pureed strawberries and heavy cream.
