Ingredients

For the Cake

  • 4 large eggs Fresh and large for the best volume and texture.
  • 1/2 cup granulated sugar Sweetener to elevate your cake.
  • 1/2 cup all-purpose flour For the backbone of your cake.
  • 1/4 cup cocoa powder Enriching the cake with deep chocolate flavor.
  • 1 tsp baking powder To give your cake that perfect rise.
  • 1/4 tsp salt Enhancing the sweet and savory flavors.
  • powdered sugar For dusting and adding sweetness.

For the Filling

  • 1 cup heavy cream The decadent filling that gives the cake its luxurious texture.
  • 2 tbsp powdered sugar Sweetening the whipped cream filling.
  • 1 tsp vanilla extract Adding a warm, fragrant aroma.
  • 1 cup cherry pie filling For that signature Black Forest touch.
  • Chocolate shavings A delightful garnish to crown your creation.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a 10×15-inch jelly roll pan by lining it with parchment paper and lightly greasing the edges.
  • In a large mixing bowl, whisk together the eggs and granulated sugar until light and fluffy (about 3-4 minutes).
  • Sift the flour, cocoa powder, baking powder, and salt into the egg mixture and gently fold to maintain aeration.
  • Pour the batter into the prepared pan and spread evenly. Bake for 10-12 minutes or until a toothpick comes out clean.

Assembly

  • Dust a clean kitchen towel with powdered sugar. Turn the cake out onto the towel, peel off parchment, and roll it up while warm. Let it cool.
  • In a separate bowl, whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  • Carefully unroll the cooled cake, spread whipped cream and cherry pie filling, and roll back up.
  • Dust with powdered sugar and garnish with chocolate shavings before slicing and serving.

Notes

Consider adding almond extract to the whipped cream or substituting mascarpone for a richer flavor. Fresh cherries can replace cherry pie filling for a natural sweetness.
