Ingredients
  

For the crust

For the cheesecake filling

For the blueberry sauce

Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  • For the crust, in a medium bowl, combine graham cracker crumbs with granulated sugar. Pour in melted butter and mix well.
  • Press this mixture into the bottom of the prepared springform pan and bake for 8-10 minutes until golden.
  • Once done, remove the crust from the oven and allow it to cool.

Cheesecake Filling

  • In a large mixing bowl, add softened cream cheese and granulated sugar. Beat until smooth.
  • Add vanilla extract and eggs one at a time, mixing well after each addition.
  • Incorporate sour cream and heavy cream until combined.

Blueberry Sauce

  • In a saucepan over medium heat, combine fresh blueberries, granulated sugar, and lemon juice. Cook for 5-7 minutes until it thickens.

Baking

  • Pour cheesecake filling over the cooled crust, then drop blueberry sauce spoonfully over the top.
  • Gently swirl the sauce into the filling using a knife.
  • Bake for 50-60 minutes until set but with a slight jiggle in the center.
  • Turn off the oven and let the cheesecake cool inside for 1 hour.
  • Refrigerate for at least 4 hours, or overnight for best results.

Serving

  • Remove the cheesecake from the springform pan, slice, and enjoy chilled.
  • Optionally, add extra fresh blueberries on top before serving.

Notes

For a healthier version, consider swapping some cream cheese for Greek yogurt. Allow cheesecake to cool completely before refrigerating to maintain texture.
