  • In a mixing bowl, combine the graham cracker crumbs and melted butter, creating a fragrant mixture.
  • Press this crumbly blend firmly into the bottom of a springform pan to form the crust.
  • In a separate bowl, beat the softened cream cheese and sugar until smooth and airy, for about two minutes.
  • Add the vanilla extract and mix again.
  • Add the eggs one at a time, ensuring each egg is well incorporated before adding the next.
  • Gently fold in the sour cream.

Baking

  • Pour the creamy cheesecake batter over the prepared crust, smoothing it out evenly.
  • In a small saucepan, heat the blueberry jam and sugar, stirring until melted and smooth.
  • Drop spoonfuls of the blueberry mixture over the cheesecake batter and use a toothpick to gently swirl it.
  • Bake for 50-60 minutes, or until the center is set but still has a slight jiggle.
