  • 450 grams cauliflower, tender and delicate Chop into small florets.

  • 200 grams red cherry tomatoes, halved For garnish.

Liquids

  • 5 cups milk, rich and creamy Adds creaminess.

Instructions
 

Preparation

  • Chop the broccoli and cauliflower into small florets.
  • In a large pot, bring the milk to a simmer over medium heat, adding a pinch of salt.
  • Once the milk is simmering, carefully add the broccoli and cauliflower florets and cook until tender, about 15-20 minutes.

Sautéing Vegetables

  • In a skillet, heat the olive oil over medium heat.
  • Introduce the chopped onion, carrot, bell pepper, and minced garlic into the pan and sauté until softened and the onion becomes translucent, about 5-7 minutes.

Blending and Combining

  • Once the broccoli and cauliflower are tender, remove the pot from heat and process the mixture using an immersion blender until smooth.
  • Stir the sautéed vegetable mix into the creamy broccoli and cauliflower mixture.
  • Taste and add more salt if needed.

Serving

  • Garnish with chopped parsley and halved cherry tomatoes before serving hot.

Notes

For added flavor, consider adding nutmeg or cheese before blending. For a spicier kick, add crushed red pepper flakes while sautéing. This dish also allows for heartier additions like cooked chicken or tofu.
