Dressing and Seasoning

Preparation

  • Start by washing and drying the peach, heirloom tomatoes, and cherry tomatoes.
  • Core the peach and slice each half into thin wedges. Arrange the slices artfully on your serving plate.
  • Slice the heirloom tomatoes into thick rounds and place them alongside the peach slices on the platter.
  • Cut the cherry tomatoes in half and distribute them evenly around the plate.
  • Position the whole burrata on one end of the plate or tear it open and spread it across the salad.
  • Drizzle olive oil generously over the fruits and cheese, then sprinkle with salt to taste.
  • Finish with a drizzle of balsamic glaze and fig glaze or jam atop the burrata.
  • Garnish the salad with fresh basil leaves.

Notes

Opt for the ripest produce for maximum flavor. You can substitute fresh peaches with nectarines or plums if preferred.
