Ingredients
  

For the churro dough

  • 1 cup water Essential for creating a rich churro dough

For the cheesecake filling

  • 1 package cream cheese, softened (8 oz) The star of our cheesecake filling
  • 1/4 cup granulated sugar Sweetening the filling

For coating and garnish

  • 1 cup granulated sugar For coating and sweetness
  • 1 tablespoon ground cinnamon Offering a warm, spicy kick
  • 1/2 cup caramel sauce Store-bought or homemade for drizzling

Instructions
 

Preparation

  • In a medium saucepan, boil water, butter, and salt over medium heat.
  • Once boiling, remove from heat and stir in flour until a cohesive mixture forms.
  • Return to heat and cook for an additional 1-2 minutes until the dough is smooth and pulls away from the sides.
  • Allow to cool for a few minutes, then incorporate eggs one at a time, mixing well after each addition.
  • Stir in vanilla extract for added flavor.

Frying

  • Heat vegetable oil in a deep fryer or heavy-bottom pot to 350°F (175°C).
  • Prepare the cheesecake filling by beating cream cheese, granulated sugar, and vanilla extract until smooth.
  • Using a piping bag fitted with a large round tip, pipe churro dough into rings directly into the hot oil. Fry for 2-3 minutes per side until golden brown and crisp.
  • Remove churro rings and drain on paper towels, then roll in a mixture of sugar and cinnamon to coat.
  • Fill the center of each churro ring with cheesecake filling and drizzle with caramel sauce before serving.

Notes

Consider adding lemon or orange zest to the cheesecake filling for a refreshing twist. For additional crunch, sprinkle chopped nuts on top of the caramel drizzle. Maintain the oil temperature while frying for even cooking.
