Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a small saucepan, melt the butter over medium heat.
  • Add the brown sugar, corn syrup, and a pinch of salt to the melted butter. Stir well until the sugar has fully dissolved.
  • Pour in the heavy cream and stir until the filling is completely smooth, then remove from the heat and allow it to cool slightly.
  • In a large bowl, whisk the eggs and vanilla extract together.
  • Gradually add the slightly cooled sugar and butter mixture to the eggs, whisking constantly.
  • Add the chopped pecans to the mixture, stirring gently to combine.
  • Carefully pour the pecan mixture into the prepared pie crust, spreading it out evenly.

Baking

  • Bake for 40-45 minutes, or until the filling is set and the top is a beautiful golden brown.
  • Let the pie cool completely before slicing.

Serving

  • Optionally, serve each slice with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

Toast the pecans in a dry skillet for enhanced flavor. For a thicker filling, use an extra egg or increase the corn syrup amount. Don’t rush the cooling process.
