Ingredients
  

For the macaron shells

  • 100 g almond flour providing a nutty flavor and crunchy texture
  • 100 g powdered sugar adding sweetness and a smooth finish
  • 100 g granulated sugar for caramelization
  • 2 large egg whites room temperature
  • 1/4 tsp cream of tartar optional, stabilizes egg whites
  • as needed orange and green food coloring for the carrot design, optional

For the filling

  • 100 g cream cheese adding a rich, creamy texture
  • 50 g unsalted butter softened for smooth consistency
  • 100 g powdered sugar for sweetness and creaminess
  • 1/2 tsp vanilla extract offering a warm note
  • 1/2 tsp cinnamon infusing warmth
  • 30 g finely grated carrot for moisture and carrot flavor

Instructions
 

Preparation

  • Preheat the oven to 300°F (150°C). Line two baking sheets with parchment paper or silicone mats.
  • Sift the almond flour and powdered sugar into a bowl to ensure a smooth batter.
  • In a separate bowl, beat the egg whites on medium speed until soft peaks form, then gradually add the granulated sugar while continuing to beat until stiff peaks form.
  • Gently fold the dry ingredients into the egg whites using a spatula, being careful not to deflate the mixture.
  • Divide the batter and add food coloring if desired. Mix until you achieve the desired shade.
  • Transfer the batter into piping bags and pipe small circles on the prepared baking sheets.
  • Let the macarons rest for 30-60 minutes until they form a skin.

Baking

  • Bake the macarons for 15-18 minutes. Let them cool completely before removing from the baking sheet.

Filling Preparation

  • Beat together the cream cheese and butter until smooth.
  • Add powdered sugar, vanilla extract, and cinnamon. Fold in grated carrot until combined.

Assembly

  • Pair macaron shells and pipe the filling onto one shell, then sandwich with another shell.
  • Let assembled macarons rest in the fridge for at least 24 hours before enjoying.

Notes

Make sure your egg whites are at room temperature for better volume. Use a kitchen scale for precision when measuring ingredients. Try incorporating orange zest into the filling for added brightness.
