Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper or a silicone baking mat.
  • In a small bowl, combine the softened cream cheese, powdered sugar, and 1/2 tsp of vanilla extract. Beat until smooth and creamy.
  • In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and packed brown sugar until light and fluffy (about 2-3 minutes).
  • Add the eggs one at a time to the butter and sugar mixture, beating well after each addition. Incorporate the remaining 2 tsp of vanilla extract.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • Gently fold in the chocolate chips until evenly distributed.
  • Scoop about 1 tablespoon of the cookie dough, flatten it slightly, place a teaspoon of cheesecake filling in the center, and top with another tablespoon of cookie dough. Seal the edges.
  • Place the cookie dough balls on the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake the cookies for 10-12 minutes or until the edges are golden brown. The centers should still be soft.
  • Allow the cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Notes

Use a cookie scoop for uniform sizes. Consider chilling the dough for 30 minutes to prevent spreading and enhance flavors. Don't over-bake for a gooey center.
