Instructions
 

Preparation

  • Slice each zucchini in half lengthwise, yielding four 'steaks'.
  • Score the flesh side of each zucchini half about 1/4 inch deep diagonally at 1/2-inch intervals.
  • Season the scored sides with 1 teaspoon of salt and let them sit for about 15 minutes.
  • Preheat your oven to 425°F.

Cooking

  • In a skillet over medium heat, combine the minced garlic, crushed red pepper flakes, and 2 tablespoons of olive oil. Stir until fragrant, about 1 to 2 minutes.
  • Scrape the garlic-infused oil into a bowl and set aside.
  • In the same skillet, add 1 tablespoon of olive oil and pat the zucchini half dry with paper towels.
  • Cook the zucchini steaks until golden brown on the bottom, about 2 to 3 minutes, then transfer them to a baking sheet with the flesh side facing up.
  • Brush the scored zucchini with the reserved garlic oil.
  • Bake the zucchini in the preheated oven until tender in the center, approximately 8 to 10 minutes.
  • Top each zucchini piece with shredded mozzarella and Parmesan cheese.
  • Return the baking sheet to the oven and broil on high until the cheese melts and turns golden brown, about 2 to 3 minutes.
  • Transfer the cheesy zucchini steaks to a serving platter and garnish with torn fresh basil and additional crushed red pepper flakes.

Notes

For enhanced flavor, add herbs such as oregano or thyme to the garlic oil. Experiment with different types of cheese for a unique twist. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
