  • 2 cups creamy mashed potatoes rich in flavor and texture.
  • 1 cup shredded cheddar cheese for that ooey-gooey goodness.
  • 1/4 cup grated parmesan cheese adding a savory touch.
  • 1/4 cup sour cream or cream cheese optional for extra creaminess.
  • 1/4 cup chopped green onions or chives offering a fresh bite.
  • 1 large egg to bind the mixture together.
  • Salt & pepper to taste enhancing the overall flavor.
  • 1/4 cup breadcrumbs for a deliciously crispy coating.
  • 2 tbsp butter, melted drizzled on top for flavor and crispiness.

Preparation

  • Preheat your oven to 375°F (190°C).
  • Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the creamy mashed potatoes, shredded cheddar cheese, grated parmesan cheese, sour cream (or cream cheese), and green onions (or chives).
  • Crack in the egg, and stir everything together until well combined. Season with salt and pepper to taste.
  • Shape the mixture into small balls or puffs, about 1-2 tablespoons each.
  • Roll each puff in breadcrumbs to create a light coating.
  • Drizzle melted butter over the top of each puff.

Baking

  • Bake in the preheated oven for 20-25 minutes until golden brown and crispy.
  • Serve warm and enjoy!

Notes

Make ahead: The mixture can be prepared a day in advance. Monitor baking time, as every oven is different.
