Cheesy Steak Quesadillas

Ingredients
  

For the Filling

  • 1 pound Skirt Steak, diced into 1-inch pieces
  • 1 Tbsp Vegetable Oil For sautéing
  • 2 Tbsp Taco Seasoning
  • 1/4 cup Salsa Adjust to taste
  • 1 1/2 cups Cheddar Cheese, shredded Can substitute with other cheese varieties
  • 1 1/2 cups Monterey Jack Cheese, shredded

Instructions
 

Preparation

  • Start by heating the vegetable oil in a large skillet over medium heat.
  • Add the diced skirt steak in an even layer on the skillet. Sprinkle the taco seasoning over the steak and sauté for 1-2 minutes on each side until it’s lightly browned.
  • Once the steak is browned, add the diced red bell pepper and yellow onion to the skillet. Continue to sauté for 5-7 minutes until the steak is cooked through and the vegetables are soft.
  • Drizzle the salsa over the steak and veggie mixture, tossing to coat all the ingredients evenly. Sauté for a few more minutes to allow the flavors to meld, then remove from heat.

Cooking

  • Preheat a griddle or cast-iron skillet over medium-high heat.
  • For each tortilla, sprinkle a small amount of both cheddar and Monterey Jack cheese. Layer the steak and vegetable mixture on one half, then top with more cheese.
  • Fold each tortilla in half like a half-moon shape.
  • Cook the quesadilla on the griddle until one side is golden brown, which should take 1-2 minutes. Flip and let the other side cook until it is also golden brown.
  • Once cooked, remove the quesadillas from the heat, slice them into wedges, and serve immediately.

Notes

To elevate your Cheesy Steak Quesadillas, consider adding sliced jalapeños for an added kick and experiment with different cheeses. Serve with sour cream or guacamole for dipping.
