  • 1/8 teaspoon pepper To season.
  • 1 cup crumbled Ritz crackers (for topping) For a crunchy topping.
  • 3 tablespoons unsalted butter, melted (for topping) To help stick the topping together.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Slice off the root and stem ends of the Vidalia onions, then cut them in half vertically. Peel each half and chop into slivers about 1/4-inch to 1/2-inch thick.
  • In a saucepan, place the chopped onions and cover them with water. Bring to a boil over medium heat and simmer for about 8 minutes until they are tender. Drain thoroughly.
  • In a large bowl, toss the warm, drained onions with 2 tablespoons of unsalted butter.

Mixing

  • In another large bowl, beat the 3 eggs with the can of evaporated milk until well combined.
  • Fold in the cooked onions, crumbled Ritz crackers, shredded cheddar cheese, salt, and pepper, mixing gently until uniformly combined.

Baking

  • Prepare a 9x13-inch baking dish by coating it with non-stick spray and transfer the onion mixture into the dish, spreading it out evenly.
  • In a small bowl, combine 1 cup of crumbled Ritz crackers with 3 tablespoons of melted butter, stir until fully coated, then sprinkle over the casserole.
  • Bake in the preheated oven for about 45 minutes, or until the casserole is set in the middle and has turned a golden brown.

Notes

Taste your Vidalia onions before cooking; if they’re overly sweet, consider adding a pinch of sugar to balance the flavors. You can prepare the casserole ahead of time and store it in the fridge for up to a day before baking. Consider adding chopped bell peppers or spinach for added nutrition.
