Cherry Filling Ingredients

  • 1 tbsp 1 tbsp lemon juice (optional) Adds brightness.

Whipped Cream Topping Ingredients

  • 2 cups 2 cups heavy cream For an indulgent topping.
  • 0.5 cups 1⁄2 cup powdered sugar Sweetens the whipped cream.

Garnish

Instructions
 

Preparation of Cake

  • Preheat the oven to 350°F (175°C) and grease/flour two 9-inch round cake pans.
  • In a large bowl, whisk together flour, baking powder, baking soda, salt, cocoa powder, and sugar.
  • Add eggs, buttermilk, vegetable oil, and vanilla extract. Mix until smooth.
  • Gradually pour in boiling water while stirring continuously to create a thin batter.
  • Divide batter between pans and bake for 30-35 minutes or until a toothpick comes out clean.
  • Allow cakes to cool completely before assembling.

Preparation of Cherry Filling

  • In a medium saucepan, combine cherries, sugar, and lemon juice over medium heat.
  • Cook for 5-7 minutes until cherries soften and juices are released.
  • If desired, mix cornstarch with water and stir into the cherry mixture. Cook until thickened.
  • Remove from heat and let cool to room temperature.

Making Whipped Cream

  • In a chilled bowl, combine heavy cream, powdered sugar, and vanilla extract.
  • Beat until soft peaks form and cream remains light and airy.

Assembling the Cake

  • On a serving platter, place one layer of chocolate cake and spread cherry filling on top.
  • Add a dollop of whipped cream, then place the second layer of cake on top.
  • Frost the entire cake with remaining whipped cream, decorating as desired.
  • Refrigerate for at least 2 hours before serving.

Notes

Use fresh cherries for best flavor. You can also layer flavors with almond extract or store the cake in an airtight container for up to 3 days.
