Preparation

  • Preheat your oven to 400°F (200°C). In a mixing bowl, toss the sliced tomatoes with olive oil, minced garlic, salt, and pepper until evenly coated. Spread the mixture on a parchment-lined baking sheet and roast for 20 minutes.
  • Season the thinly sliced chicken breasts with a pinch of salt, smoked paprika, and Italian seasoning. Heat olive oil in a skillet over medium heat and cook the chicken for about 5 minutes on each side until golden brown and cooked through. Once cooked, remove it from the skillet and slice it thinly.
  • In the same skillet, add the thin lemon slices and minced garlic. Toss in the butter and cook briefly until fragrant and the garlic is golden, about 2 minutes.
  • While the tomatoes are roasting, cook the spaghetti according to package instructions until al dente. Drain the pasta and reserve a cup of the pasta water.
  • In the skillet with the garlic butter, combine the cooked spaghetti and lemon slices. Toss to ensure the spaghetti is coated in the garlic butter sauce. Remove the lemon slices afterward to avoid excessive bitterness.
  • To assemble, place servings of spaghetti on plates, topping each with slices of cooked chicken, roasted tomatoes, and generous dollops of creamy burrata cheese. Garnish with freshly chopped basil and lightly toasted pine nuts.

Notes

Always start with high-quality ingredients, particularly the cherry tomatoes and the burrata cheese. For an extra kick, sprinkle some red pepper flakes before serving. Store leftovers in an airtight container for up to 3 days.
