  • 4 medium medium potatoes, diced golden and wholesome
  • 1 lb ground beef rich and flavorful
  • 1 cup shredded cheese cheddar or your favorite, melty goodness
  • 1 onion, chopped for a sweet and aromatic base
  • 1 can chili beans or your favorite chili, robust and hearty
  • 2 tablespoons olive oil for that perfect sauté
  • to taste Salt and pepper for added flavor

  • 1 dollop sour cream creamy indulgence

Instructions
 

Cooking the Potatoes

  • In a large skillet, heat the olive oil over medium heat. The oil should shimmer, indicating it’s hot enough to add your potatoes.
  • Add the diced potatoes and chopped onion to the skillet. Cook them until the potatoes become crispy and golden brown, stirring occasionally.

Adding Ground Beef

  • Once the potatoes are just right, push them to one side of the skillet. Add the ground beef to the empty side and cook it until browned, breaking it up with a spatula.
  • Mix the cooked beef into the potatoes until well combined.

Finishing Touches

  • Pour in the chili beans, and season with salt and pepper to taste. Stir everything together and allow the mixture to bubble.
  • Reduce the heat to low, and sprinkle the shredded cheese generously on top. Cover the skillet and let it sit until the cheese melts.

Serving

  • Serve hot, garnished with optional toppings such as sour cream, sliced green onions, or jalapeños.

Notes

Optional extras include bell peppers or corn for extra sweetness and texture. Consider using smoked paprika for a smoky flavor. For a vegetarian version, swap ground beef with black beans.
