For the chicken

  • 1 1/2 pounds boneless skinless chicken thighs, cut into bite-size pieces

  • 1 large egg, lightly beaten For batter.
  • 1/4 cup all-purpose flour To create the perfect coating.

For the vegetables

  • 1/2 medium yellow onion, chopped For sweetness.

Prepare the Sauce

  • Begin by mixing the granulated sugar, apple cider vinegar, ketchup, soy sauce, brown sugar, sesame oil, and minced garlic in a large mixing bowl. Whisk until everything is smooth and well combined.
  • In a separate bowl, blend the cornstarch with a splash of water to create a slurry. This will ensure your sauce has the right consistency.

Prepare the Chicken

  • Heat a generous amount of canola oil in a skillet or wok over medium heat.
  • Season the chicken pieces with salt. Coat each piece in cornstarch, then dip them into the beaten egg, and finally, coat them with flour.

Fry the Chicken

  • Fry the chicken in batches, allowing them to cook for about 4-5 minutes or until golden brown on all sides.
  • Use a wire rack to drain the fried chicken, keeping it crispy and delicious.

Sauté the Vegetables

  • After frying, remove excess oil from the pan, leaving about a tablespoon behind.
  • Add the chopped onion, red bell pepper, and green bell pepper (and optional pineapple) to the pan.
  • Sauté for roughly 3 minutes until they are slightly tender yet still vibrant.

Combine and Serve

  • Pour the prepared sweet and sour sauce into the pan with the sautéed vegetables.
  • Add the cornstarch slurry and let it simmer for around 3 minutes, allowing everything to meld together beautifully.
  • Return the fried chicken to the pan, tossing it well in the sauce to coat every piece.
  • Serve hot, garnished with sesame seeds or chopped green onions if desired.

Notes

To elevate your sweet and sour chicken, consider marinating the chicken in a bit of soy sauce and garlic for 30 minutes before frying. For variations, you can substitute chicken for shrimp, tofu, or beef, and use different vegetables and sauces as desired.
