Instructions
 

Preparation

  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is smooth and fluffy.
  • Stir in the vanilla extract, then gradually add the flour mixed with salt, carefully folding until just combined.
  • Fold in the mini chocolate chips.
  • Press half of the cookie dough mixture into the bottom of a greased 9x9-inch baking dish.

Assembly

  • Spread the softened vanilla ice cream generously over the cookie dough layer.
  • Crumble the remaining cookie dough on top of the ice cream and press it lightly.

Freezing

  • Place the dish in the freezer for at least four hours or until firm.
  • Melt the chocolate chips, preparing to drizzle this over the top.

Serving

Notes

Make sure to properly soften your butter to prevent a dense dough. Allow enough freezing time for firm structure. You can swap vanilla ice cream for a dairy-free option or use almond flour for gluten-free bars.
