Instructions
 

Preparation

  • Mix the crushed chocolate cookies and melted butter in a bowl until the crumbs are evenly coated, resembling wet sand.
  • Press the mixture firmly into the bottom of a springform pan to create a uniform crust. Chill in the refrigerator.

Filling Preparation

  • In a large mixing bowl, beat the softened cream cheese and sugar until light and fluffy.
  • Gradually add the eggs, mixing well after each addition, then stir in the vanilla extract.
  • Divide the mixture in half and place one portion in a separate bowl.

Adding Flavors

  • In one bowl, fold in the melted dark chocolate.
  • In the other bowl, gently mix in the fresh strawberry purée.

Swirling & Baking

  • Alternately spoon dollops of chocolate and strawberry mixtures into the prepared crust.
  • Using a knife or skewer, swirl the mixtures together to create patterns.
  • Bake in a preheated oven at 325°F (160°C) for 40-45 minutes until a slight jiggle remains in the center.

Chilling & Serving

  • Allow the cheesecake to cool to room temperature, then refrigerate for at least four hours before slicing.
  • Serve with chocolate sauce or whipped cream, and fresh strawberries on the side.

Be careful not to overbake; the cheesecake should have a slight jiggle in the center when done. For best flavor, chill for at least four hours.
