Ingredients
  

Fritter Batter

  • 2/3 cup whole milk
  • 1 large egg, at room temperature
  • 2/3 cup all-purpose flour plus 2 tablespoons
  • 2.5 tablespoons icing (powdered) sugar
  • 1 pinch salt
  • 1 tablespoon olive oil

Frying

  • 1 liter frying oil

  • 10-12 slices canned pineapple from a 20 oz. can
  • 4.2 oz shredded coconut

Preparation of Batter

  • Sift the all-purpose flour into a large mixing bowl. Add the icing sugar and mix well.
  • Create a well in the center to incorporate the egg and olive oil. Blend until combined.
  • Gradually pour in the cold milk while continuing to mix, ensuring the batter is smooth and thick, resembling pancake batter.
  • Once combined, cover the bowl and refrigerate the batter for about 2 hours.

Prep the Pineapple

  • Drain the canned pineapple slices thoroughly and pat them dry with paper towels.

Heat the Oil

  • In a large saucepan, pour in the frying oil and heat it to 350°F (175°C).

Coat the Pineapple

  • On a shallow plate, spread a generous layer of shredded coconut.
  • Dip each drained pineapple slice into the chilled batter, allowing any excess to drip off before dredging it in the coconut.

Fry to Perfection

  • Carefully place the coated pineapple slices into the hot oil, frying them for about 1-3 minutes on each side or until golden brown.

Drain and Serve

  • Transfer the fritters onto a paper towel-lined plate to drain any excess oil. Serve hot.

Notes

To elevate the fritters, consider adding vanilla extract or a hint of spice such as cinnamon.
