Preparation

  • In a large mixing bowl, combine the cottage cheese, all-purpose flour, baking powder, salt, olive oil, and egg. Add garlic powder if desired.
  • Mix the ingredients with a fork until a shaggy dough forms. If the dough feels dry, gradually add water until it comes together.
  • Transfer the dough to a lightly floured surface and knead for a few minutes until smooth and elastic.
  • Divide the dough into small balls about the size of a golf ball, then flatten each ball into disks with a rolling pin.

Cooking

  • Heat a non-stick skillet over medium heat and cook each disk for about 2-3 minutes per side until golden brown.

  • Serve the warm flatbreads alongside dips or toppings like yogurt or grilled vegetables.

Notes

For healthier alternatives, consider using whole wheat flour and adding spinach or herbs for flavor. Refrigerate dough for up to 24 hours or freeze cooked flatbread for a month.
