Preparation

  • Preheat your oven to 400°F (200°C). Pierce the sweet potatoes with a fork and place them on a baking sheet. Bake for 45-50 minutes until soft.
  • In a medium skillet, melt the butter over medium heat. Add the diced apple and cranberries, along with nutmeg, cinnamon, and a pinch of salt. Cook for 5-7 minutes until apples soften and cranberries burst.
  • Stir in maple syrup and cook for an additional 2 minutes. Set aside to allow flavors to meld.

Mixing and Baking

  • Once sweet potatoes are baked and cool enough to handle, scoop out the flesh into a mixing bowl, leaving some around the edges.
  • Mix half of the cranberry-apple filling into the sweet potato flesh until smooth.
  • Spoon the mixture back into the sweet potato skins, topping with the remaining cranberry-apple filling. Return to the oven and bake for another 10-12 minutes.

Notes

For a creamier texture, blend the sweet potato flesh thoroughly. Consider adding a splash of vanilla extract to the filling for enhanced flavor. Top with granola or nuts before the final baking for crunch.
