Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  • Add the eggs one at a time, beating well after each addition. Stir in the orange zest and vanilla extract.
  • In a separate bowl, combine the freshly squeezed orange juice and buttermilk.
  • Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk mixture.
  • Gently fold in the chopped cranberries and white chocolate chips.
  • Spoon the batter evenly into the cupcake liners, filling each about two-thirds full.
  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cupcakes cool completely on a wire rack.

Notes
