  • 1 lb ground turkey sausage wonderfully seasoned and hearty

  • 8 oz lasagna noodles, broken into smaller pieces for tender bites

For seasoning

  • 1 teaspoon dried basil fragrant and earthy
  • 1 teaspoon dried oregano to enhance the Italian flair
  • 1/2 teaspoon red pepper flakes optional for heat
  • Salt and pepper to taste

For creaminess

  • 2 cups heavy cream which adds that luscious creaminess
  • 1 cup ricotta cheese adding a creamy and rich touch
  • 1/2 cup grated Parmesan cheese imparting a sharp, nutty flavor
  • 1 1/2 cups shredded mozzarella cheese for that classic melty goodness

For garnish

  • 1 bunch fresh parsley, chopped for a beautiful garnish

Instructions
 

Cooking the Soup

  • In a large pot, cook the ground turkey sausage over medium heat until browned, breaking it apart with a wooden spoon as it cooks. Drain any excess fat.
  • Add the chopped onion and minced garlic to the pot, sautéing for approx. 2-3 minutes until the onion becomes soft and fragrant.
  • Pour in the chicken broth and bring the mixture to a simmer.
  • Add the crushed tomatoes, broken lasagna noodles, dried basil, dried oregano, red pepper flakes (if desired), and salt and pepper. Stir to combine and cook for about 10-12 minutes, or until the noodles are tender.
  • Mix in the heavy cream, ricotta, Parmesan, and mozzarella cheeses. Stir continuously until the cheese has melted into the soup.
  • Taste the soup, adjusting the seasoning with more salt, pepper, or red pepper flakes, if desired.
  • Serve the soup in bowls, garnishing each serving with fresh, chopped parsley.

Notes

For extra flavor, consider adding spinach or kale. Roasted garlic can enhance the richness of the dish. Substitute ground turkey with chicken, beef, or a plant-based alternative for variations.
