Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Steam the broccoli and cauliflower florets in a steamer basket over boiling water for 6-8 minutes until they are tender yet crisp.

Making the Sauce

  • In a saucepan over medium heat, melt 1/4 cup of butter.
  • Gradually whisk in the flour, cooking for 1-2 minutes to create a roux.
  • Slowly add the whole milk while continuing to whisk until the sauce thickens and becomes creamy.
  • Stir in the garlic powder, salt, onion powder, black pepper, and nutmeg.
  • Remove from heat and incorporate 1/2 cup of the shredded mixed cheese, stirring until it melts completely into the sauce.

Combining and Baking

  • In a large mixing bowl, combine the creamy cheese sauce with the steamed broccoli and cauliflower florets. Mix well.
  • Pour the mixture into a greased baking dish, spreading it out evenly.
  • Top with the remaining cheese and sprinkle panko bread crumbs over the top.
  • Place the dish into the preheated oven and bake for 35-40 minutes, or until it is bubbly and golden.

Serving

  • Optional – garnish with freshly chopped chives or green onion before serving.

Notes

Consider adding a splash of lemon juice for brightness or incorporating cooked chicken for a protein boost. Use frozen florets if in a rush but adjust steaming time.
