For Assembly

  • 1 cup brewed espresso or strong coffee, cooled Provides bittersweet notes.
  • 2 tablespoons coffee liqueur (optional) Adds indulgent flavor.
  • 24 pieces ladyfinger cookies Essential for structural integrity.
  • 2 tablespoons cocoa powder (for dusting) Adds rich finish.
  • 0.25 cup chopped pistachios (for garnish) Gives crunch and visual appeal.

Instructions
 

Preparation

  • Place 1 cup of shelled pistachios in a food processor and pulse until finely ground, retaining some texture.
  • In a large mixing bowl, combine 1.5 cups of softened mascarpone cheese with 0.5 cup of heavy cream, 0.25 cup of powdered sugar, and 1 teaspoon of vanilla extract. Whisk until smooth and fluffy.
  • Fold in the ground pistachios gently until incorporated.
  • In a shallow dish, combine 1 cup of cooled brewed espresso with 2 tablespoons of coffee liqueur, if using.
  • Quickly dip each ladyfinger into the coffee mixture and lay them in a single layer at the bottom of a 9x9-inch dish.

Assembly

  • Spread half of the pistachio mascarpone mixture over the layer of ladyfingers.
  • Repeat with another layer of dipped ladyfingers followed by the remaining mascarpone mixture.
  • Cover and chill in the refrigerator for at least 4 hours, preferably overnight.

Serving

  • Dust the top with cocoa powder and sprinkle with chopped pistachios just before serving.

Notes

For the best results, use high-quality mascarpone and don't rush the chilling process. Store leftovers in the fridge for 3-4 days.
