Ingredients
  

For the Salmon

For the Sauce

  • 1/2 cup roasted red peppers, jarred or homemade, chopped Provides sweet, smoky flavor.
  • 1/2 cup heavy cream Binds all ingredients with a dreamy texture.
  • 1/4 cup grated Parmesan cheese Lends depth and complexity to the sauce.
  • 1 teaspoon lemon juice Adds brightness to round out the dish.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Heat olive oil in a large, oven-safe skillet over medium-high heat.
  • Season the salmon fillets generously with salt and pepper and place them skin-side down in the skillet.
  • Cook for about 4-5 minutes per side until golden and crispy. Remove from skillet and let rest.

Making the Sauce

  • In the same skillet, melt the butter over medium heat.
  • Add minced garlic and sauté until fragrant, about a minute.
  • Stir in chopped spinach and cook for 2-3 minutes until wilted.
  • Add roasted red peppers, heavy cream, and Parmesan, and allow to simmer until the sauce thickens.
  • Finish with a squeeze of lemon juice and adjust seasoning as desired.
  • Return the salmon to the skillet, spoon the sauce over each piece, and slide the skillet into the oven.
  • Bake for 5-7 minutes until the salmon is cooked through.

Serving

  • Remove from the oven, garnish with parsley if desired, and serve.

Notes

For a lighter version, use Greek yogurt instead of heavy cream. Pair with rice, mashed potatoes, or a salad.
