Preparation

  • Puree 14 ounces of the diced tomatoes in a food processor until smooth.
  • In a medium skillet over medium heat, combine the pureed tomatoes, minced garlic, and heavy cream. Bring to a gentle boil.
  • Reduce heat to low and let the sauce simmer until slightly thickened, for about 5 minutes.
  • Stir in fresh spinach, basil, grated Parmesan cheese, dried oregano, tortellini, and the remaining diced tomatoes with their liquid.
  • Pour in vegetable broth, ensuring all tortellini is submerged. Cook until tortellini is warmed through, about 5 to 8 minutes.
  • Sprinkle with additional Parmesan cheese before serving.

Notes

For extra flavor, use fresh ingredients. If you want a creamier sauce, let simmer longer or add more heavy cream. You can add red pepper flakes for heat or additional vegetables for nutrition.
