Instructions
 

Cooking the Salmon

  • Heat olive oil in a large skillet over medium-high heat.
  • Season salmon fillets generously with salt and black pepper on both sides.
  • Place the salmon fillets in the skillet, skin-side down and cook for 3-4 minutes per side.
  • Remove salmon from the skillet and set aside.

Making the Sauce

  • In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant.
  • Add chopped spinach and sun-dried tomatoes, cooking for another 2-3 minutes.
  • Pour in the heavy cream and broth, stirring to combine.
  • Season with dried oregano, and if desired, add red pepper flakes.
  • Simmer for about 5 minutes until the sauce thickens.

Finishing the Dish

  • Return the salmon to the skillet and spoon sauce over it for 2-3 minutes.
  • Garnish with fresh parsley before serving.

Notes

Use fresh herbs for a more aromatic touch, and consider half-and-half or coconut milk as lighter options for cream. Store leftovers in an airtight container for up to 3 days.
