  • 8 oz cream cheese Adds richness to the dish.
  • 1 can cream of chicken soup Provides depth of flavor.
  • 1 can Rotel tomatoes with chilies Do not drain; adds tang.

Main Ingredients

  • 2.25 lbs ground beef Hearty and savory element.
  • 1 box bowtie pasta Boil until al dente.

Preparation

  • Place a skillet over medium heat and brown the ground beef until fully cooked.
  • Drain any excess fat and transfer the cooked beef into a crockpot.
  • Cut the Velveeta and cream cheese into chunks and add to the crockpot with the ground beef.
  • Add the cream of chicken soup and the un-drained Rotel tomatoes to the crockpot.
  • Stir all ingredients together, cover the crockpot, and cook on low for 3-4 hours, stirring occasionally.
  • About 20 minutes before serving, boil the bowtie pasta according to package directions until tender.
  • Drain the pasta and gently fold it into the creamy cheese mixture in the crockpot.

Notes

For a healthier option, substitute ground beef with lean ground turkey or plant-based alternatives. For added flavor, include chopped vegetables or adjust the spice level with milder or hotter tomatoes.
