Ingredients
  

For the crust

  • 1.5 cups graham cracker crumbs for a crunchy base
  • 0.25 cups granulated sugar to add a touch of sweetness to the crust
  • 0.5 cups unsalted butter, melted to bind the crust together

For the cheesecake filling

  • 3 packages cream cheese, softened the heart of the cheesecake, creamy and rich
  • 0.75 cups granulated sugar enhancing the sweetness of the filling
  • 1 tsp vanilla extract for aromatic flavor
  • 3 large eggs to provide structure and creaminess
  • 1 cups sour cream to add tanginess and creaminess
  • 0.5 cups heavy cream for a luxurious, rich texture

For the caramelized topping

  • 0.25 cups granulated sugar for the caramelized topping
  • 1 tbsp brown sugar for added caramel note on top

Instructions
 

Preparation

  • Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan, lining the bottom with parchment paper.
  • In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined.
  • Press the mixture firmly into the bottom of the prepared pan and bake for 10 minutes. Remove and set aside to cool.

Cheesecake Filling

  • In a large mixing bowl, beat together the softened cream cheese, 3/4 cup of sugar, and vanilla extract until smooth and creamy.
  • Gradually add eggs, one at a time, mixing well after each addition, then stir in sour cream and heavy cream until smooth.
  • Pour the cheesecake mixture over the cooled crust, smoothing the top with a spatula.

Baking

  • Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center has a slight jiggle.
  • Let it cool in the oven with the door ajar for 1 hour, then chill in the fridge for at least 4 hours.

Caramelizing

  • Just before serving, sprinkle granulated sugar and brown sugar evenly over the cheesecake surface.
  • Caramelize the sugar using a kitchen torch until golden, creating a crispy top.

Serving

  • Slice the cheesecake carefully and serve it chilled for the best experience.

Notes

Ensure cream cheese is fully softened for a smooth batter. Fresh eggs improve flavor and texture. If lacking a kitchen torch, use a broiler carefully to caramelize. Customize with fresh berries or chocolate sauce.
