  • 1 tablespoon potato starch (for dusting) For dusting before frying.

Preparation

  • Start by boiling the potato cubes in salted water until they are fork-tender, about 15-20 minutes.
  • Once tender, drain the potatoes well and mash until smooth and creamy.
  • In a mixing bowl, combine the mashed potatoes with black pepper, parsley, grated Parmesan, and potato starch. Mix until well incorporated.
  • Divide the mixture into two equal portions and roll each into a dough ball.
  • Dust a surface lightly with potato starch, then roll out each dough ball into a rectangle, about 1/2 inch thick.
  • Cut the rolled-out dough into strips to form fry shapes.

Cooking

  • Heat oil in a deep fryer or large pan to about 350°F (175°C).
  • Carefully fry the potato strips in batches until golden brown and crispy, about 5-7 minutes for each batch.
  • Once fried, drain on a wire rack set over paper towels to remove excess oil.
  • Serve hot and sprinkle with additional grated Parmesan if desired.

Notes

For optimal crispiness, ensure the oil is adequately heated before frying. Avoid overcrowding the pan. Variations include adding garlic powder or paprika for extra flavor. For a healthier alternative, bake at 400°F (200°C) for 20-25 minutes.
