Preparation

  • Preheat the oven to 425°F (220°C) to create a crispy texture.
  • In a large bowl, combine cauliflower florets with olive oil, Old Bay seasoning, chili pepper, and freshly ground black pepper. Toss until well-coated.
  • Spread the seasoned cauliflower evenly onto a lined baking sheet.

Cooking

  • Roast in the preheated oven for 30-35 minutes, flipping halfway through.
  • In the final 10 minutes, sprinkle grated cheddar and parmesan cheese over the cauliflower to let it melt and form a golden crust.
  • Once roasted, remove from oven and let it cool slightly before serving.

Notes

Consider marinating the cauliflower for 30 minutes before roasting to enhance flavors. For extra crunch, sprinkle panko breadcrumbs over the cheese for the last few minutes of roasting.
