Preparation

  • Preheat the oven to 425°F (218°C).
  • Place an oven-proof wire rack over a large rimmed baking sheet and spray it generously with cooking spray.
  • In a medium bowl, toss the zucchini rounds with olive oil until evenly coated.
  • In a separate small bowl, combine grated parmesan cheese, panko breadcrumbs, and salt.

Baking

  • Coat each zucchini slice in the breadcrumb mixture and arrange them on the wire rack.
  • Bake for 15-20 minutes or until golden brown and crispy, watching closely in the last few minutes to avoid burning.
  • Serve warm, optionally with Greek yogurt ranch for dipping.

Notes

For extra crunch, consider pre-salting the zucchini slices for 10-15 minutes to draw out moisture. You can also add spices like garlic powder or paprika for an extra kick.
