Main Ingredients

  • 1.5 to 2 lbs chicken breast or thighs Choose bone-in or boneless, skinless options for a juicy base.
  • 2 cups frozen mixed vegetables A colorful mixture of peas, carrots, corn, and green beans.
  • 1 can (10.5 oz) condensed cream of chicken soup The rich foundation that binds all flavors.
  • 1 cup milk Adds creaminess and enhances the sauce.
  • 2 cups Bisquick or biscuit mix Fluffy and soft, perfect for topping.
  • 1/2 cup butter Essential for the biscuit topping's richness.
  • 2-3 tbsp milk (optional) Adjusts the consistency of the biscuit mix.

Seasoning

  • 1 tsp salt Enhances all the flavors.
  • 1/2 tsp black pepper Adds a mild kick.
  • 1/2 tsp garlic powder Infuses a subtle garlic flavor.
  • 1/2 tsp thyme Brings an earthy tone to the dish.

Instructions

Preparation

  • Start by cutting the chicken into bite-sized pieces. Gather your frozen mixed vegetables for easy access during cooking.

Mix the Base

  • In your slow cooker, combine the chicken, mixed vegetables, condensed cream of chicken soup, milk, salt, pepper, garlic powder, and thyme. Mix everything well until the chicken and vegetables are well coated in the creamy goodness.

Slow Cook the Filling

  • Cover your slow cooker and set it on low. Cook for approximately 5 to 6 hours.

Prepare Your Biscuit Topping

  • About 30 minutes before you’re ready to serve, mix the Bisquick with the melted butter. If desired, add the additional milk to adjust the dough's consistency until it’s thick but still soft.

Add the Biscuit Dough

  • Using spoonfuls, drop the biscuit mixture over the chicken filling in the slow cooker. Make sure to leave some gaps for steam to escape.

Finish Cooking

  • Cover the slow cooker again and cook for an additional 30 to 45 minutes, until the biscuit topping rises and turns a beautiful golden color.

Serve and Enjoy

  • Once finished, serve the dish hot. For a nice touch, you can garnish with fresh parsley or thyme.
