Ingredients

Meatball Ingredients

  • 1 lb ground beef The foundation of your meatballs, producing tender bites that are juicy and flavorful.
  • 1/2 cup breadcrumbs Helps bind the meatballs while providing a delightful texture.
  • 1/4 cup grated Parmesan cheese Adds a savory, nutty flavor to each meatball.
  • 1 large egg Essential for holding everything together, making your meatballs perfectly moist.
  • 2 cloves garlic, minced For that aromatic punch that enhances the meat's natural flavors.
  • 1 teaspoon dried thyme Offers a delightful herby note that complements the dish.
  • 1 teaspoon dried oregano Provides a subtle earthiness that pairs beautifully.
  • 1/2 teaspoon salt Essential for enhancing the flavors.
  • 1/2 teaspoon black pepper Adds a nice touch of warmth.
  • 2 tablespoons olive oil (for browning) For achieving a golden, crispy exterior on the meatballs.

For the Sauce

  • 2 cups French onion soup The star ingredient that brings the dish together with its rich, sweet onion flavor.
  • 1 tablespoon Worcestershire sauce Adds depth and umami.
  • 1 teaspoon Dijon mustard Provides a subtle tanginess that balances the sweetness of the onion soup.
  • 1 teaspoon fresh thyme For a burst of fresh herby goodness.

For Serving

  • 1 cup shredded Gruyère cheese The creamy, melty topping that will elevate your dish to the next level.

Instructions

Preparation

  • In a large mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, egg, minced garlic, dried thyme, oregano, salt, and pepper. Mix well until all ingredients are fully incorporated.
  • Shape the mixture into meatballs, each about 1 to 1.5 inches in diameter.

Browning Meatballs

  • Heat olive oil in a large skillet over medium heat. Once the oil is shimmering, add the meatballs in batches, being careful not to overcrowd the pan. Cook for about 2-3 minutes per side until they become golden brown all over.
  • Transfer the cooked meatballs to your crock pot.

Cooking

  • In a separate bowl, whisk together the French onion soup, Worcestershire sauce, Dijon mustard, and fresh thyme. Pour the sauce over the meatballs in the crock pot, ensuring they are well-coated.
  • Cover the crock pot and cook on low for 4-6 hours or high for 2-3 hours until the meatballs are tender and cooked through.

Finishing Touch

  • About 10 minutes before serving, sprinkle the shredded Gruyère cheese generously over the meatballs, then cover again to allow the cheese to melt.

Notes

For perfectly juicy meatballs, avoid overmixing the meat mixture. Consider adding sautéed onions or mushrooms to the meatball mix for extra flavor. You could also substitute ground turkey or chicken for a lighter version.
