Instructions
 

Preparation

  • In a medium bowl, combine the chopped dates with hot brewed coffee and let them soak for about 10 minutes.
  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  • Cream the softened butter and granulated sugar together until light and fluffy. Add the eggs one at a time, then mix in the vanilla extract.
  • Gradually mix in the dry ingredients and then fold in the date-coffee mixture and chopped walnuts gently.
  • Pour the batter into the prepared loaf pan, smoothing the top.

Baking

  • Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Making the Glaze
